Do I gain weight eating salad?

Sometimes, hidden carbs from croutons, dried fruit, or salad dressings cause you to gain weight. If you’re doing keto and intermittent fasting, hidden carbs are likely not the problem.

If you’re eating more salad than you’re used to, your body may not have the microbes and enzymes necessary to properly digest it.

Vegetables contain two types of fiber: insoluble fiber and soluble fiber. Soluble fiber retains water and insoluble fiber does not. If you are not able to break down the fiber, it can slow digestion and cause water retention. This will cause you to gain weight from the excess water and undigested fiber.

To prevent weight gain and other uncomfortable side effects like bloating, try steaming your vegetables. This breaks down some of the fiber in your vegetables making them easier to digest. You can also try eating vegetables like squash, cauliflower, broccoli, and asparagus instead of salad.

It can be helpful to reduce your vegetable intake until you build up your gut microflora to adequately digest the fiber from vegetables. You can slowly increase your intake of plant foods over time.
